The idea to take basic nachos and to spin it into an Asian delight might be one of my favorite original recipes. I took the basic concept of chips, fresh lettuce, meat, and cheese sauce and totally turned it multicultural. Substituting won tons as the chips, fresh crisp cabbage slaw as the lettuce, sauteed ground turkey as the meat, and sweet chili sauce on top…it’s absolutely and addictively amazing! I hope you try this recipe because it’s absolutely worth it.
First, you need to make the slaw so that it can chill for a bit. Take roughly 2 cups of finely shredded cabbage. Add 3 teaspoons of white wine vinegar. Season with a pinch of pepper and 1-2 teaspoons of sugar. Add 1-2 tablespoons of mayonnaise, just enough to bring all the ingredients together. Stir to combine the mixture and then cover and set it aside for later.
Next, it’s time to prepare the meat portion. Take 1 lb of ground turkey and brown in a skillet on medium high heat. Season with salt and pepper. Once almost browned, add 1/2 chopped red onion and 1/2 chopped orange bell pepper. Cook until the onions and peppers are soft, about 4 minutes total. Then, add 3 cloves of chopped garlic, 1 tablespoon of Rice Vinegar, 1 tablespoon of soy sauce, and 1 tablespoon of Sriracha sauce and stir. Cook an additional 2 minutes and then remove from the heat. Top with 1 tablespoon of fresh cilantro and set aside.
To prepare the chips, heat a pan of peanut oil to 360 degrees. The typical frying temperature is 375 but the wontons are very thin so they really do best at a lower temperature. Take the package of wonton wrappers and cut the squares into triangles. Once the oil is at temperature, add some wonton wrappers one at a time. Don’t over crowd them otherwise you’ll have a big blob of fried stuck togetherness. Cook for 1-2 minutes and then turn over. Continue to cook until nice and brown, about 3-4 minutes total. Remove from the oil and lightly salt with Kosher salt. Repeat until all the wontons are prepared. Pay attention because they can go from light golden to dark brown quickly.
Gently place a layer of fried won tons on a plate. Lightly drop dabs of the slaw mixture on top of the chips and then top with the meat mixture. To finish, lightly drizzle lines of the sweet chili sauce and then top with chopped cilantro. You are done! I hope you enjoy!!!
