As I was preparing a menu for a Simply Southern themed dinner, I came across this dip recipe that has now become one of my favorites! If you love hummus, you’ll love this recipe. It is absolutely delightful. The combination of flavors followed by a zing from the fresh lemon juice will dance on your palate all afternoon. It is a bean dip, so……your palate may not be the only thing dancing all afternoon! Here’s what to do. It is so simple!
2 cans of black-eye peas, drained and rinsed
1-2 cloves of garlic
1/2 cup tahini paste
1/2 cup extra-virgin olive oil, plus more for drizzling
The juice of 3 freshly squeezed lemons
3/4 teaspoon salt
1/4 teaspoon cayenne pepper
Pico de gallo (optional)
Don’t be intimidated if you’re not familiar with tahini paste. It is a sesame paste that you can find in the international section of your local grocery store. My Kroger app told me exactly which aisle and shelf to find it on. Add all of the ingredients in a food processor (except for the pico). Combine until smooth, about 3-5 minutes. Transfer the dip into a serving bowl and drizzle with extra olive oil. I recommend you top with pico if you desire. It really does add another element. I buy the already prepared pico from Kroger….it is fresh, cheap, and already prepared. Serve with tortilla chips and enjoy. This really is a quick and easy treat that will impress everyone!
